This recipe is courtesy of my nephew Nico. He made them this morning, so I had him teach me! They were really tasty. The flavor of the salsa was nicely infused with the eggs instead of just pouring the salsa on top which is what is used to do! Thanks Nic!
INGREDIENTS
2 Eggs
1/4 Cup Salsa (Your choice, I used Tostitos mild jarred salsa)
1/8 Cup Shredded Cheese (Your choice, I used the Kraft shredded Mexican Blend)
1/8 tsp. Salt
1/8 tsp. Pepper
1/2 Tbs. Butter or Margarine for cooking
1 Tortilla
DIRECTIONS
Crack 2 eggs, remove the chalazae (the white stringy thing), in a mixing bowl.
Beat the eggs until well blended.
Add the salsa.
Continue to mix the eggs and salsa until well blended.
Add the salt and pepper and mix briefly.
Heat 1/2 Tbs. of butter or margarine in a small non-stick pan over medium heat.
Add eggs and stir continuously until eggs are fully cooked and not runny.
Turn off heat and add cheese on top of eggs.
Heat tortilla over an open flame on stove top. Be sure to flip so both sides are toasty.
Remove tortilla from flame and place on plate.
Scoop eggs and place on the tortilla.
Wrap like a burrito by taking the right side of the tortilla and fold over part of the eggs.
Take the bottom of the tortilla and fold up over the eggs.
Take the top of the tortilla and fold down over the eggs.
Voila! You have a salsa eggs burrito!
