INGREDIENTS

Potatoes, sliced
Best Foods Mayonnaise
Mushrooms, diced
Scallions, thinly sliced
Vegetable Oil

DIRECTIONS

Wash potatoes and slice evenly.  (I use a mandolin.)
Dice mushrooms and slice scallions.
In a small/medium bowl toss the mushrooms with mayonnaise until coated.
Heat oil in pan and cook potatoes on both sides.


While the potatoes are cooking, place a dollop of mayonnaise for each potato slice you have and quickly brown each side (1 min. each).
Flip the mayonnaise and place on top of cooked potato slice.

Quickly cook the mushrooms, 1-2 minutes.
To serve, plate the potatoes with mayonnaise, add a small scoop of mushrooms to each slice, and top with a few scallions.
