I first had these awesome tacos at Pinchies Tacos in Culver City. I figured out how to make them. My husband loves them.
INGREDIENTS
1/2 Bag of Chopped Nopales
4 Tomatoes, chopped
1/2 White Onion, chopped
1/2 Jalapeño, diced
Salt and Pepper, to taste
Tortillas
Salsa, guacamole, and cotija cheese for toppings
DIRECTIONS
Place the nopales into a pan of water and boil for 40 min.
While the nopales are cooking, chop the tomatoes, onion, and jalapeño.
At the 40 min. mark, drain the nopales and run under cold water.
Mix together the nopales, tomatoes, onions, and jalapeño. Add salt and pepper to taste.
NOTE: Serve on corn or flower street sized tortillas. Top with salsa, guacamole, and cotija cheese (optional) if desired.
I also serve this was limes and my "Chipotle" cilantro lime rice.
